We were in NY at a gift show, having lunch with a group of stationery store owners from across the country, and a couple of the women were raving about the Bellagio Sipping Chocolate they sampled in Bellagio's booth. Well, we don't sell chocolate at The Pleasure of Your Company, but we noted the booth number to stop by and see what they were gushing about.
One sip of this deliciously decadent chocolate, and The Pleasure of Your Company added a new category of merchandise! We had to have it for ourselves, so we've brought Sipping Chocolate and Bellagio Unsweetened Cocoa in to the store.
Here's their recipe for Dark Chocolate Cupcakes, which are absolutely amazing:
Dark Chocolate Cupcakes
8 T unsalted butter, cut into 4 pieces
2 oz. bittersweet chocolate, chopped
1/2 C Bellagio Unsweetened Cocoa
3/4 C all-purpose flour, sifted
1/2 t baking powder
1/2 t baking soda
2 large eggs
3/4 C sugar
1 t vanilla extract
1/2 t salt
1/2 C sour cream
Preheat over to 350 degrees. Line standard-sized muffin pan with cupcake liners. Combine butter, chocolate and Bellagio Unsweetened Cocoa in heatproof bowl. Set bowl over simmering water until completely melted, then whisk until smooth. Set aside to cool.
Whisk flour, baking soda, and baking powder in small bowl to combine. Whisk in eggs, then add sugar, vanilla, and salt until incorporated. Whisk in 1/3 C flour mixture over cooled chocolate mixture until combined. Add sour cream, and remaining flour mixture until fully incorporated.
Divide batter evenly among muffin pan cups. Bake 18-20 minutes. Set muffin pan on wire rack to cool for 15 minutes. Once cooled, remove from muffin pan and frost with icing.
The Bellagio recipe booklet available in the store has a recipe for chocolate frosting, for double decadence.
